Alfredo Sauce - The Secret Really Is In The Sauce

The secret really is in the sauce y'all! We've been cooking and baking a lot around our house during this downtime with our "shelter in place" orders due to the COVID-19 virus. Based on the posts in my Instagram feeds, so is everyone else, lol. I mean, what else is there to do when you've exhausted all of your Netflix, Hulu, Starz and Apple TV series, cleaned the house, closets, patios, refrigerator, caught up on work...cooking and baking is next, right?? I think the COVID-19 weight gain(like the Freshmen 10 during the first year of college) may actually be a real thing! Frightening isn't it, lol.

We are making the best of the downtime and enjoying our time together and I feel so blessed to have the opportunity to have everyone home, just wish it was under different circumstances. We want to do our part in keeping everyone safe and healthy and so for now staying at home as much as possible seems to be what helps the most. We can do that and if that comes with a weight gain of a few pounds, well, then I guess that's ok and we can worry about that later once we are past this. And in the meantime, we are really enjoying all of these recipes that we have wanted to try for months! 


Today on my Instagram stories, I posted a pic of my daughter Cara's chickpea pasta with her homemade Alfredo sauce. It was delicious!! And super easy to make too. Several years ago, way back actually, I attended culinary classes at a local college, back in the day when I was running a catering company. One of my favorite take aways from culinary school was learning how to make perfect sauces. And one of my favorite tricks to the perfect sauce was adding a pinch of nutmeg to the Alfredo. Yum!! It's magic I promise!

So the next time you are craving a little something rich and comforting, try a pasta with a homemade Alfredo sauce and add a pinch of nutmeg. You'll love it!


Kim's Easy Alfredo Sauce

Ingredients

6 Tablespoons salted butter

1 Tablespoon garlic, minced

2 Tablespoons all-purpose flour

1.5 cups milk

1/2 cup Parmesan cheese, grated

1/2 cup Romano cheese, grated

Salt and pepper to taste

A pinch of nutmeg - the secret ingredient for a rich, indulgent sauce

1 lb fettuccine or pasta of your choice

Parsley to garnish - optional


Instructions

1. Boil the pasta according to package directions.

2. Begin the sauce as the water heats for the pasta. Melt the butter in a large saucepan over medium heat. Add the minced garlic and cook for one minute.

3. Whisk in the flour. Gradually adding the heavy cream, then the milk, whisking constantly to avoid sticking and burning the mixture. This is where I throw in a pinch of nutmeg and add salt and pepper to taste. 

4. Reduce the heat to low once the sauce has begun to bubble. It will continue to thicken as it simmers. 

5. Slowly sprinkle in the cheeses and continue to whisk. 

6. Drain the pasta and carefully mix it into the sauce until well incorporated. The pasta will absorb the sauce and it will get even thicker. 

7. Garnish with chopped parsley and serve piping hot!

Julian Price House - Hillside Designer Show House

Good morning all,It's already Thursday of the second week in February. Can you believe it? I feel like it should still be January, lol.In my last post I mentioned that we are over the moon thrilled to be working on the Hillside Designer Show House featuring the Julian Price House of Greensboro, NC. We have been working on this project since October and it is now in full swing with paint and wallpaper going up, cabinets being built, floors being refinished. It's a crazy, happy mess but so much fun. If you are following along on Instagram, you've been seeing some of the before and after shots. We will continue to keep you up to date on all of the changes we are making without giving away too much - we don't want to spoil the surprise. Let's start at the beginning, here's a video from GTN's "This is Greensboro" with Rosemary Plybon. I think you'll agree, it's an amazing home with enormous possibilities and promise. We are so excited and honored to be a part! Design In A Day Workshops 2018

Hello friends and hello 2018!!A big hug and welcome to all of my loyal followers and all of you who are new to following KHH aka Kim Hoegger Home, aka Cottage Girl. I am so glad that you are here and am so looking forward to starting this new year off with a bang and dishing out some really great interior design knowledge, sources and just plain old fun. There's so much to share so I hope you'll come back weekly to check in on what's happening with KHH.For starters, we have opened a brand new studio in downtown Mckinney, Texas and are so happy to be there. It's a lovely space that we are honored to call home and we have the best landlord ever! We can't wait for you to see it and hope you'll give us a call and come by to see us soon. I am over the moon excited about this project for so many reasons. Not only is this house on the historical register and one of the most beautiful and well built homes in the Greensboro area, it's also an interior designer's dream come true. Well, at least for me it is!! The house was built in 1929(they had me at "built in 1929" lol) by the very well known insurance salesman, Julian Price. I have truly never seen such an incredible structure  - the architecture is stunning but the manner and materials from which it was constructed is the most incredible part to me. I won't spoil the surprise by giving you too many details but STAY TUNED for updates on the Blog and watch as we transform two beautiful spaces within the Home. And...drumroll, we are debuting Kim Hoegger Home Textiles and Wallpaper in one of the rooms - So exciting! Cheers to 2016!! Part One

Good morning friends,It's been awhile since I have written a blog post, a long while actually as I have spent most of 2015 with my head down recovering from the mistakes of 2013-2014, lol. It's been an uphill climb my friends, I kid you not. It's been one of the hardest years of my professional career(aside from 2007 which is was a nightmare all of it's own and a story for another day).Why you ask? Allow me to share a few things wtih you.As an entrepreneur, my mind is always dreaming and creating. It's non-stop brain activity for me. It's exhilarating but can be exhausting at the same time. Ideas can be successful and then they can be draining. That's just part of the process. It's a roller coaster of a career. But, I am a risk-taker; I am a business woman who isnt afraid to stick her neck out and try new things. Hence, sometimes I succeed, sometimes I fail.Be Grateful2013-2014 was a very humbling experience for me. And although there were many wonderful and successful moments within the journey of 2013-2014, it was an experience that cost me a great deal financially and emotionally. I was never so happy as to see that journey come to an end. Seriously, there were tears of JOY when it finally ended. It was one of the hardest, most challenging journeys of my career. But beacause I am not one to dwell on the past, I look back and am thankful for the many, many grand moments along the journey, like selling a gorgeous piece of furniture to the PRESIDENT of Jimmy Choo, USA., and having KHH featured in PaperCity Dallas, LUXE Magazine, DHome Magazine and landing my FIRST MAGAZINE COVER ever! It just so happens that all of that wonder was smack dab in the middle of the worst business year and a half of my life. I was happy to see that journey come to a close and to take my grand moments and move forward way beyond 2013-2014.2015 has been a year of recovering from 2013-2014. And 2016 will join 2015 as another year of recovery. That's just business. You have to take the good with the bad. You have to "suck it up cupcake" and move beyond the past or it can really weigh you down. It's like they say, "if you cant take the heat, get out of the kitchen." It's just part of business. If you don't take the risks, you don't move forward. And I like growing and moving forward. So that's what I do, I take risks that allow me to move forward even if "forward" means learning a lot along the way, the hard way. I PUSH forward(because sometimes that's what it takes to get beyond our failures) and I leave the past in the past where it belongs.Failure is a bruisMy work is my hobby, my continuing education and my profession. I love what I do. I love to create beauty. I can't imagine doing anything else. Creating beauty makes me feel closer to God. I feel like I am my best me and the me that God intended me to be when I am creating beauty and using the talents that he has given me. So I move forward and create more beauty. It's just what I do and I am blessed beyond measure to be able to do it.Best Job coffee mugSo what does 2016 look like? Well, after much prayer, soul searching and planning, 2016 is going to be a year of a fresh start, a year of allowing myself time to breathe. It's a year to BREATHE; to take the time to RELAX and to EXPLORE. My word for the year...BREATHE. My action for the year...RELAX. My intention for the year...EXPLORE.To BREATHE, I must focus on my breath. Which means that I have to slow down and allow myself the TIME to BREATHE. If you have practiced yoga then you know that breathing properly isn't as easy as it sounds. It takes concentration. It takes discipline. So for 2016, I am going to practice breathing correctly. And it's going to take focus and discipline. It's going to take removing myself from things that I may find difficult leave but things that are not allowing me the time that I need to BREATHE properly. I need to BREATHE properly to be able to RELAX and EXPLORE.Breathe imageTo RELAX, I must give myself permission to let go of stress and fear and worry. I must be willing to RELAX because it's a tall order and I am NOT good at it. I feel a constant need to be busy, to be cranking out the goods. But this I know, to truly RELAX is to be closer to God. For it is in the quiet moments that he speaks to me and draws me closer. It is in these quiet, still moments that I am able to feel his presence in my life and know that he has control.Relax socks and coffeeTo EXPLORE, I must first be willing to take the journey. I must be willing to step out in faith and reach beyond what I can see. To fully EXPLORE in 2016, I must have the faith to move beyond my comfort zone and embrace the fear and challenge of new adventures. Here's to laying down that bag of potatoes

Hello all,What a gorgeous day it is…snow swiftly falling(and not sticking yay!) and making everything look so beautiful. I love tree branches covered in snow. It makes me happy.As we near the end of February, I am reminded of all of the beautiful blessings that have already come my way in 2015. Small simple things and reassurances that I am headed in the right direction. Thank you Lord! And I mean that with all my heart :) If it weren't for the good Lord constantly watching over me I am not sure where I would be…staying on track is a conscious daily effort. It's daily reminding myself to stop and take my vitamins, to eat healthy and read my devotion, say my prayers…whew…I am serious, some days it will be 10pm and I don't even know where the day has gone.I have had people from time to time say to me that my life looks easy, that things just seem to happen or come together for me…(my mouth drops open) Seriously??? No way...As anyone who works, owns their own business or is raising children can attest…this ain't no easy thang! In fact, it's crazy hard and stressful and overwhelming at times. It's almost more than I can take some days. BUT….thank the Lord, I have faith in the good Lord and he is with me every step of the way. He holds me up when I can't stand anymore and spurs me on when I am spent and feel like I just can't keep going. I honestly don't know where I would be if I didn't have him holding me up everyday…scary thought. So easy? Heck no! Raising a family and working, building a business is a beast!! It's like climbing a mountain while carrying several 50 pound bags of potatoes! My oh my!sack-of-potatoesThe truth is…life is hard and we aren't perfect…we are broken. We were created broken and will remain broken because it is in that brokenness that we need Jesus. It's his way of bringing us back to him so that he can love us. If I could say one thing about Jesus that I think most people misinterpret it would be that he is all about rules, that he expects us to be perfect, not to make mistakes; that if we don't follow the rules and behave perfectly he looks down on us and we are unworthy of his love. That couldn't be further from the truth!!Yes, we are unworthy, yes, we are sinners and we make mistakes BUT he already knew we would. He is the one who gave us free will. He knows we will be imperfect and fall occasionally. And every time we do, there he is to pick us up, brush off our knees and help us to stand again. Every time. I find peace in that. I find strength in that. And I live my life KNOWING he will be there when I fall and when I am so weak and exhausted from my crazy life that I can't stand on my own anymore.Here's another thought for you…how much does that bag of potatoes you are carrying really weigh? What are you really carrying in that sack? Is it worth it? I get it. No one wants to appear weak or unsuccessful. No one wants for others to see that they are tired and worn out, that they are sick to death of keeping up with everyone else and pretending to be something we are not. I get it. I do it. I am the worst at staying busy because in the stillness I can see ALL of me. Yep, all of me and I don't always like what I see. If I keep busy, I don't have time to look at me or the path I am on too closely. Can you relate?Are you busy? Are you carrying loads of potatoes up mountains everyday? Are you pushing and pushing for success that meets the expectations of others? Success that looks good and even feels right but do you wonder where the path is leading you?potatoes-bags-21715205 It is in this pursuit of this perfect life and perfect Facebook posts, SnapChat stories and Instagram posts, that we have to ask ourselves, are we living the lie? We have become masters at concealing our own heartache and disillusionment with this life. And there will come a day when we just can't do it anymore. We will fall on our knees or our flat on our faces because we are spent, we are exhausted. Are you there yet? I am and I am over it and it feels soooo good!!I will still have mountains to climb with sacks of potatoes on my back…that's just how I am wired but I will be more conscious of what type of potatoes I am carrying and if those potatoes are worth the time, effort and energy. Life's too short and my Jesus has so many plans for me that I am afraid I might miss if I don't lay down a few bags of potatoes :)Here's to eliminating a few extra bags of potatoes and only carrying those that will make a difference in the lives of others. On Your Mark, Get Set, GO!

Ever noticed the stance of a runner as he gets into position before a race? I never really thought about it because it's just what runners do, right? But as I journeyed through my devotion this morning, "Dare To Be Devoted" by Natalie Grant and Charlotte Gambill, I was able to see the stance in a totally different light. Think about how they crouch down with their feet on the blocks, hands on the ground out in front of them, it's awkward and looks really uncomfortable. I never really considered why they were in this position. I just assumed that it was "the way" to start a race.natalie grant and Charlotte

Prompted by a gentleman with a flag they follow a command of "On Your Mark, Get set, Go". Ever thought about what those commands mean? On Your Mark, Get Set, Go….and how might that apply to your life? After reading my devotional, it sure made sense to me. I have a new found respect for the runner's pre-race stance.Runners stance

So how do the commands given to a runner and his pre-race stance have anything to do with us and the way we live our lives? Allow me to explain what I learned.So many times, like right now for me, we are busy trying to figure out what we are doing next, making changes and moving in a different direction. We fix our eyes on the goal and we tear out to make it happen. Right? See the goal, make it happen. I am a doer!!! My sweet Daddy, God rest his soul, used to say, "If you want something to happen, let Kim handle it. She'll get it done and she'll do it right." And true to that, that's how I roll. BUT…sometimes, I jump out of the starting block before I have allowed myself the time to get ready and that's when mistakes happen. That's when God gently pulls me back and declares a "foot fault". He wants to let me know that my start was invalid and I need to rethink it. I need to regroup and start again.I can be in such a hurry to get on to the next task that I fail to pay attention to the way in which I started. My lack of internal posture directly affects my starting position. "It's the ability to control the starting process that determines the pace and power of our performance once the starter gun is sounded. In a professional race the smallest error in that starting line up can throw the whole race out. An incorrect starting position can even mean disqualification." from Dare To Be. Isn't that the truth?! Why are we in such a hurry? Why not take the time in the beginning to get ourselves into the right starting position so that we can run a good race? Doesn't it just make more sense to "Get On Our Mark" first? Then, "Get settled into the position" and THEN GO?Mark-Set-Go Web GraphicIn this season of my life, I think it's especially important to think before I act…to get on my mark first, settle in and then take the first step. I want to make sure that my eyes are fixed on Jesus and what he has in store for me. I want to be spiritually ready and have a proper internal posture that puts me at His feet first. Time doesn't stand still as we wait for His direction but as I have experienced so many times in my life, His timing is always better than mine and I will be rewarded for my patience in waiting for His direction.From Dare To Be:1. So where do we go from here? That was the question that consumed my mind throughout the Christmas holiday. How do I remain accessible to my clients in the Dallas area without a brick & mortar location?

It makes perfect sense! Online shopping and delivery services are all the rage! It's the wave of the future, so why not jump on the train or in our case, maybe a MERCEDES SPRINTER?? New Beginnings for 2015

With the end of the year approaching fast, we are gearing up for 2015 and one big change that will take place for KHH DALLAS. As of January 1, 2015, KHH DALLAS will begin the closing of the Dallas store. It's been a wonderful year and a half and I have loved meeting so many wonderful new friends in the Knox-Henderson area. I love it there! But as most of you are very aware and have most likely experienced personally when trying to come to the store, the parking and traffic conditions are not exactly desirable. In fact, they have proven to make business from our Dallas location very difficult. It has become necessary to make a hard decision and close the Dallas store.I wish it was as easy as making the decision and then moving into a new location. That is not the case as I have scoured the area for the past three months and there really isn't anything that will work for us in a better way. Sadly, we must close the physical location until we find a solution.It is my desire to find a location that will better serve my design clients as well as store customers. This will come with time and I will surely let you all know as soon as a decision is made regarding a new location for KHH. In the meantime, KHH will be located in our Rockwall location as we own the building and it makes sense until we make other arrangements.We will still be available to assist you with your decorating needs as well as Thibaut fabric and wall covering, upholstery, repair, refinishing and painting of your furniture, and one of a kind antique treasures that bring your home to life. You will be able to contact me directly via cell phone, email or social media and as always I am here to serve you and make your design and decorating process happy and stress-free.

Oh My Goodness…Meet Sheila G, the infamous baker and creator of the original Brownie Brittle. This may just be the most indulgent and simply satisfying treat I have ever had…I am not kidding!Is there anything better than a brownie? I mean, honestly, brownies are the bomb. They can cure a broken heart, mend a fence, lesson the anxiety of a big presentation…they are heaven, right(unless you are one of those unfortunate souls that don't like chocolate…I am so sorry for you.)I have always said, "If you have nothing else in your pantry when friends show up unexpectedly, you will be the best friend ever!! Empty Nest and New Beginnings for KHH

I don't know if it's age(I will be 51 in January) or if it's the fact that I am almost an empty nester(my baby is a Senior in high school, I have two girls in college and my oldest just graduated college) but I have been feeling a little off-course lately. Actually, if I am totally honest with myself, it may be fear of change that's making me feel so strange.Change is hard isn't it…but, as I have learned over the years, it's necessary and most often produces great results. "All things work together for good." Love that bible scripture :) Romans 8:28I generally try my best to embrace change and even look forward to it but I am not doing so well with this one. Through this new journey of change, I have become aware that I need to do more than I am currently doing. I need to give more, do more and be more of the person I was designed to be. (I mentioned foster care to my husband a few days ago, casually of course. He looked at me like I had lost my mind. I could read his…). So for now, I am starting with Dwell with Dignity and looking forward to being a part of such a great organization that helps so many families. I feel like giving of my time and design talent to Dwell with Dignity will be a great place to start.

Design & Retail Workshops coming in 2015!!!

And…beginning again in January, I will be giving back to all of you and teaching new and exciting design & retail workshops! I am so excited about doing more workshops! I had so much fun teaching and sharing all that I know with all of you. I miss it. So stay tuned for an upcoming schedule of dates and classes. My Mom has always asked me, "how do you do what you do?" I feel like it's time to answer that question. But I can't do it without your help. Please take a few moments and let me know what it is that you would like to learn from me.
